I've posted a porcini recipe here on this site.
http://tripledshow.blogspot.com/2006/01/polenta-ai-funghi-porcini.html

We're gonna make our barbecued mahi tacos.
00:01:51 Start with 2 6-inch flour tortillas.
00:01:53 it's like flash-frying 'em.
00:01:56 Not very long. so you use flour, not corn?
00:01:58 I think it tastes better. whoa. really?
00:02:01 We're gonna make mahi.
00:02:02 Start with a littleolive oil on the flat top.
00:02:03 comes in fresh, and you butcher it yourself.
00:02:06 Yep. put my blackening seasoning. great.
00:02:08 I'm just gonna whipit around. all right.
00:02:10 So while that's cookin',we're gonna take our two shells.
00:02:12 Add fresh guacamole with the cheese.
00:02:15 A little bit of tomatoes. coleslaw next.
00:02:16 That looks like that's softened up a lot.
00:02:17 Walk back to our grill.
00:02:19 we make our own vegetable stock, so you put a little bit of the grill on it.
00:02:24 That steam right there will finish the cooking process.
00:02:26 As soon as that moisture pretty much goes away, I shred it, grabthe mango barbecue sauce, put it all over it,turn this into mahi barbecue.
00:02:33 So each order is made fresh. nothing's held.
00:02:36 No heating lamps here.and I grab this mahi.
00:02:38 You really have some nice, firm fish, but it's not overcooked.exactly.
