Transcript "Chili"

Who's chili recipe is this?
00:02:05 My father had the original recipe.
00:02:07 I just messed with the spices a little bit.
00:02:09 Put a little oil in here, ground onions.
00:02:11 I think the oil's hot.
00:02:13 Now the meat goes in, ground beef.
00:02:15 You're a drive-inowned by a greek family and you're not gonna havelike, any lamb?
00:02:20 No, there's no lamb.
00:02:21 Okay, so we cook the meat downand now we go with the spices?
00:02:23 Salt, cracked pepper, paprika, a little garlic, black pepper, chili powder.
00:02:27 You gotta havechili powder in itwhich isn't from just a chile.
00:02:31 A little allspice.
00:02:32 Which isn't justall the spices,it's a berry.
00:02:34 We'll finish it off with a little hot sauce.
00:02:36 about three hours.
00:02:39 Time to eat it? yes.
00:02:45 Mmm, it's really good.

Transcript "Onion Rings"

What makes a good onion ring?
00:04:21 Having them cut every day.
00:04:22 Because onions will dry out, they will lose their pizzazz.
00:04:25 And all the centers are pulled out, we're just using the nice ring pieces.
00:04:29 Let's get going on it.1/2 gallon of milk.
00:04:32 A couple of eggs.salt, pepper.
00:04:33 Water, really,this is interesting.
00:04:35 A little bit of flour.
00:04:38 side.
00:04:40 Do you want me to add some more flour?
00:04:43 That looks thick enough.
00:04:45 Start putting 'em in the mix.
00:04:47 Turn them around, put the rings in the flour.
00:04:49 Give 'em love, toss 'em, turn 'em.
00:04:50 You guys looks so good in there, you're gonna have a good day today.
00:04:53 Shake 'em up,shake 'em up,help me, help me.
00:04:56 I'm giving 'em all the love I've got.
00:04:59 Shake 'em up in the flour, that's all they need.
00:05:01 Now we go back over hereand I dip 'em back in here.
00:05:03 Because the flour's on the onion ring the batter's stuck to the flour and now it all goes in the cracker meal, which is a non-salted cracker meal.
00:05:11 I'm mining for food in flavortown river.
00:05:14 Oh look, it's an onion ring.
00:05:16 All right, let me get them out now.
00:05:18 We do need 'em to sit aroundfor three or four hours.
00:05:21 To let that breading coat up.
00:05:23 (Guy)DO YOU WANT ME TO HOLD THAT,NO, SHE'S Got it.
00:05:25 (Maria) THEN YOU JUST PUMP 'EM OUT.
00:05:27 Put another basketon top of 'em? yeah.
00:05:29 You let them gountil they're golden brown.
00:05:31 Are you going to salt them? no, that's it.
00:05:33 All we do now is put 'em in the bowl.
